Snow greeted us this morning! Happily, we have NOT seen snow here since 25 October--almost 3 months ago! We can only hope it will be another 3 months before we see it again!!
It seemed like a perfect day to make Mac & Cheese!
Mac & Cheese from Weight Watchers magazine
8 ounces whole wheat penne pasta
2 Tablespoons canola oil
2 Tablespoons all-purpose flour
2 cups fat-free milk
2 cups fat-free cheddar cheese, grated
Salt & pepper to taste
1) Prepare pasta according to package directions. Drain. Run cold water over hot pasta to stop cooking.
2) Heat oil in skillet. Whisk in flour and brown for 2 minutes. Slowly whisk in milk. Cook on medium until it boils and thickens for about 1 minute. Remove from heat. Add grated cheddar and blend.
3) Mix pasta and cheese sauce together and transfer to oven proof casserole dish. Bake 25 minutes or until bubbly and brown at 350 degrees.
